Creating and Managing Ingredients
This screen contains configuration settings for Recipe Builder for Ingredients. You can add a new, edit, and delete ingredients from the Ingredients list.
Note
Ingredients are shared across all facilities within your organization. Any changes made updates these details in all facilities.
Production > Recipe Builder > Ingredients.
Name - Type information. Ingredient names that are published from the starter data cannot be edited and appear with a yellow lock.
Ingredient Category - Select category.
1 Each Equivalent - Enter the equivalent of 1 Each in a weight or volume measure so the ingredient can be nutritionally analyzed as part of a recipe. For example, if Each is used to describe how many eggs are needed in a recipe, then the weight of one egg should be saved here.
Nutrient Link Not Required - Select option if the ingredient does not need to be included in the nutritional analysis calculations. For example, food or non-stick cooking spray.
Nutrient Link - Select Option. Complete filter options, select Nutrient, then click Select. You must link ingredients used in recipes to nutrient information from USDA, PCC, or your own Custom source so the ingredients and recipes that contain the ingredient can be nutritionally analyzed.
Weight to Volume Ratio - Auto populates if a nutrient item is linked to an ingredient. This value is required to calculate nutrient analysis when the recipe or linked menu item's serving size is a volume measure. Values can be changed, if needed.
Cooking Yield - Auto populates if a nutrient item is linked to an ingredient. Values can be changed, if needed. This value is used in nutrient analysis calculations to reflect the losses and gains during food preparation. Ultimately, it is the difference between what is called for in the recipe and the final cooked product. For example, if a recipe calls for 1 cup of uncooked Rice and it's cooked volume is 3 cups, the Cooking Yield % for the ingredient Rice is 300%.
Find/Replace - Select option. Search for an ingredient and replace it with another comparable ingredient in selected recipes. For example, certain products can be replaced because of season, purchasing changes, and so on.
Select Ingredient, then click Find/Replace.
Select Recipe(s), then click Replace.
Select Replacement Ingredient, then click Replace.
Click Replace.
When you change the name of an ingredient used in a recipe, the name changes in all recipes it is used in.
You can click the Nutrient Item name to view the detail and complete nutrient breakdown.
An ingredient cannot be deleted if it is assigned to a recipe.
