Creating a New Recipe

You can create recipes in Recipe Builder to include in your Recipe Book. You can enter the recipe name, category, original # of portions, serving size and unit, serving temperature, serving utensils, notes, prep time, and cook time. You can complete the recipe details such as ingredients, sub recipes, ingredient description quantity, and directions. You can enter multiple ingredients in each step, and repeat the process until the recipe is complete. You can convert all ingredient quantities in a selected recipe from conventional to metric units of measure and the reverse is also true.

Note

Rename Recipes allows you to batch rename recipes when terminology changes occur within your organization. For example, renaming due to new terminology per the International Dysphagia Diet Standardisation Initiative (IDDSI).

This button is available on the Recipe Listing screen and is only visible if you have the Administrator user role assigned.

  1. Production > Recipe Builder.

  2. Click Add New Recipe.

Adding a New Recipe

  • Recipe Name - Type information. Keep name short and descriptive. You can use special characters.

  • Recipe Number - Auto populates after the recipe name is entered.

  • Category - Select from list.

  • Original # of Portions - Type information.

  • Servings/Pan - Servings per pan value should only be entered if you want the recipe to be scaled by that value when resized. For example, you cannot scale a cake to an exact number of portions, it must be scaled by 12 because a pan makes 12 servings.

  • Serving Size/Unit - Type information, then select a unit.

  • Serving Temp - Select Temperature from list. For more information, see Creating and Managing Serving Temperatures.

  • Serving Utensil - Select Utensil(s) from list. For more information, see Creating and Managing Serving Utensils.

  • Recipe Note -Type information.

  • Prep Time - Type information.

  • Cook Time - Type information.

  • Pre-purchased - Select option. If selected, indicates the recipe is pre-purchased ready made and you do not want a Scaled Recipe report to print from the Production Worksheet.

Menu Item Links - Select to link menu item(s) to the recipe. For example, different servings sizes or different textures. The menu item(s) must be linked to a recipe to print various recipe reports.

  1. Click Menu Item Links icon, then select a menu item.

  2. Click > to move from Available Menu Items to Linked Menu Items.

  3. Click < to move from Linked Menu Items to Available Menu Items.

Adding Recipe Details

  • Ingredients - Type, search, or create new recipe ingredient. Add multiple ingredients in a section, if applicable. Click Add Ingredient to start a new section. Click the search icon to add ingredients or a recipe. For example, adding A la King Sauce to the Chicken A La King recipe.

  • Description - Type special instructions. For example, chopped or firmly packed.

  • Quantity - Type serving size and select unit.

  • Quantity Conversion - Select to convert ingredient quantities from Conventional to Metric units and the reverse is also true.

  • Directions - Click Add Directions to type specific directions for the set of ingredients. Click the check mark to save. Click Edit Recipe Directions to modify.

  • Up Down Arrows - Select option to click and drag the recipe detail section up or down.

  • It is recommended to duplicate and modify an existing recipe to create a similar recipe. For example, duplicate Chocolate Pudding Pie to create Vanilla Pudding Pie.

  • The recipe details save as you proceed through the steps.

  • Click the name of the ingredient in a recipe to view and edit the Ingredient Details, including category, nutrient item link, and weight to volume ratio.

  • The Nutrition Facts table reads Cannot Calculate if there is a problem with the nutrient analysis of a recipe. Click the Printer icon to view the Problems Report. All problems must be corrected to calculate the nutrient analysis.

  • The quantity and unit of measure automatically adjust to ensure the recipe ingredients use practical units. For example, if you enter 32 tablespoons of butter, it converts to 2 cups.

  • Click a sub-recipe listed as an ingredient to print the sub-recipe.

  • Click Change Photo to upload a recipe photo. The recipe photo must be uploaded to the computer before adding it to a recipe. Photo must be .jpeg and no more than 10 MG.
